Breakfast Muffins with Apple
Delicious on-the-go breakfast muffins with apple, cranberries, and nuts, perfect for when you're short on time in the morning. Sweetened with maple syrup.
Ingredients
Cupcake tin, cupcake liners
100 grams of Lisa's Choice flour
40 grams of Lisa's Choice oats
1/2 tsp baking powder
1/4 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
pinch of salt
70 grams of maple syrup (or agave syrup)
40 grams of sunflower oil
1 egg
100 grams of 10% fat Greek yogurt
1 firm apple, such as Pink Lady, diced
40 grams of dried cranberries or raisins
30 grams of chopped walnuts
extra oats for decoration
Preparation
1. Preheat the oven to 175°C.
2. Place the cupcake liners in the cupcake tin.
3. In a bowl, combine flour, oats, baking powder, baking soda, cinnamon, nutmeg, and salt using a whisk.
4. In another large bowl, whisk together the maple syrup, oil, egg, and yogurt.
5. Add the dry ingredients to the wet ingredients and mix with a spatula until well combined. The batter will be thick.
6. Once the ingredients are well mixed, fold in the diced apple, cranberries, and chopped nuts.
7. Divide the batter evenly among the cupcake liners (about 55-60 grams per liner).
8. Sprinkle some oats over the batter for decoration.
9. Place the cupcake tin in the oven and bake for 18-20 minutes, or until the muffins are golden brown and a toothpick comes out clean.
10. Allow the muffins to cool slightly. You can store the muffins in the refrigerator for a few days.
