Cheese bites
Delicious pieces of cheesecake dipped in chocolate.
Requirements
• Square/rectangular baking pan (20x20 cm)
• Parchment paper
• Food processor to crumble cookies
Ingredients
For the bottom
• 2 boxes of Lisa's Choice chocolate butter cookies
• 70 grams of melted butter
Filling
• 450 grams of cream cheese
• 100 - 150 grams of sugar
(or sugar substitute like erythritol)
• 18 grams of cornstarch or arrowroot
• 1/8 teaspoon of salt
• 2 eggs
• 1 teaspoon of vanilla extract
Chocolate topping
• 30 grams of coconut oil
• 200 grams of dark chocolate
Preparation
Preheat the oven to 165°C (329°F).
Crust: Crumble the cookies in the food processor and mix them with the melted butter. Press the mixture onto the bottom of the baking pan and compact it well. Place the baking pan in the refrigerator.
Filling: Combine the filling ingredients and mix well with a mixer until it forms a smooth mixture. Pour the filling onto the cooled crust and place it in the preheated oven for about 30 minutes. Allow it to cool and then let it set in the freezer (for about 2 hours).
Cut the rectangle into small candies. Melt the chocolate with the coconut oil using a double boiler, let it cool slightly, then dip each candy into the melted chocolate one by one. Place them in the refrigerator for a while. Enjoy!
