Jam Shortbread Bars
This one is always a good choice! Whether you enjoy it with a nice cup of coffee or as part of a leisurely breakfast or brunch.
Requirements
Square baking pan with a removable bottom (22.5 x 22.5 cm)
Oven, baking sheet
Preparation time: 10 minutes
Baking time: 30 minutes

Ingredients
- 225 grams of butter
90 grams of fine granulated sugar
1 teaspoon of vanilla extract
260 grams of Lisa's Choice flour
¼ teaspoon of salt
200 grams of raspberry jam
Preparation
1. Preheat the oven to 180°C (356°F).
2. Mix the butter, sugar, flour, salt, and vanilla extract together for 2 minutes until a (crumbly) dough forms.
3. Press 2/3 of the dough into the baking pan and spread a generous layer of jam over it. Then crumble the remaining dough over the jam, leaving some of the jam visible between the dough.
4. Place the baking pan in the oven and bake for about 25-30 minutes until it turns a nice golden brown.
5. Allow to cool and then cut into rectangular pieces.
