Lemon Bars
Are you also a fan of everything with lemon in it? Then you should definitely try these delicious lemon bars. And of course, they are completely gluten-free. Enjoy them as a snack or as a dessert with a scoop of vanilla ice cream.
Ingredients
Square baking pan of 20x20 cm
Baking paper to line the baking pan
Hand mixer or food processor
Bottom
115 grams (unsalted) butter
30 grams confectioners' sugar
130 grams Lisa's Choice flour
Pinch of salt
Lemon Filling
200 grams granulated sugar
2 large eggs
80 ml lemon juice (juice from about 1.5 lemons)
Zest of 1 lemon
25 grams Lisa's Choice flour
Confectioners' sugar for decoration
Preparation
1. Preheat the oven to 165°C.
2. Line the baking pan with a piece of parchment paper, covering both the bottom and the sides. This will create some folds in the corners, but they won't be visible after baking.
3. In a bowl, combine the butter and sugar and mix until creamy. Add Lisa's Choice flour and salt, and mix briefly until the dough just starts to come together. Then knead the dough by hand until it forms a ball. If the dough is too sticky, chill it for a while.
4. Evenly distribute the dough in the baking pan. You can do this by hand or roll the dough into a square sheet and then place it in the bottom of the pan. Place the baking pan in the oven and bake the crust for about 20 minutes, until golden brown.
5. While the crust is in the oven, prepare the filling. In a bowl, whisk together the eggs and sugar until they become light and airy. Add the lemon zest and juice, and mix briefly.
6. Sift the flour into the bowl and gently fold it into the egg-lemon mixture.
7. Once the crust is golden brown, pour the filling over it.
8. Place the baking pan back in the oven and bake for approximately 18-20 minutes, or until the filling has set.
9. Allow to cool on a wire rack.
10. Sift a layer of confectioners' sugar sugar over the cooled lemon bars, and then cut the sheet into nice squares (about 5x5 cm) or rectangles.
The lemon bars are best enjoyed on the same day. If you have leftover lemon bars, you can store them in a sealed container in the refrigerator for about 3 days. However, keep in mind that the confectioners' sugar might be absorbed into the filling. Before serving, you can sift a new layer of confectioners' sugar over the bars.
