Lisa's Ricotta Pancakes
These pancakes originated during a vacation in Italy. Due to the lack of other options, we used ricotta cheese, and the end result turned out incredibly delicious!

Ingredients
For 10 pancakes:
Pancakes
75 g of Lisa's Choice flour
1/2 tsp of baking powder
250 g of ricotta
2 handfuls of raisins
A bit of honey
2 eggs
(Clarified) butter for cooking
Topping
Powdered sugar
Fresh blueberries
Fresh mint leaves
Preparation
1. Sift the flour into a medium-sized bowl. Then, add all the ingredients (except the butter) and whisk them together until well combined and airy, using a whisk.
2. Heat a skillet over medium heat. Lightly grease it with butter. Scoop a large spoonful of batter onto the hot pan, making pancakes about 5-6 cm in diameter. Flip them over when bubbles appear on the surface and cook until the other side is browned.
3. Garnish the pancakes with blueberries, powdered sugar, and fresh mint leaves!
