Mini Bagels
Baking your own bagels isn't just delicious, it's also a lot of fun. These bagels are enriched with sesame, poppy seeds, and sunflower seeds. They're perfect for lunch or a summer picnic!

Ingredients
For 16-18 mini bagels
For the bagels
330 ml lukewarm water
1 tablespoon honey
1 tablespoon active dry yeast (fresh)
1.5 teaspoons salt
525 grams of Lisa's Choice flour
For the boiling water bath
approximately 2 liters of water
60 ml honey
For the topping
1 egg
sunflower seeds, sesame seeds, poppy seeds
Preparation
Pour the lukewarm water into a mixing bowl and gently stir in the honey. Sprinkle the yeast over the water-honey mixture and let it sit for 5 minutes. Once the yeast starts foaming, add the salt. Mix everything together gently. Gradually add the flour while continuing to mix until a firm dough forms. Sprinkle some flour on a clean countertop and knead the rough dough for about 10 minutes until it feels smooth and elastic.
Lightly grease a mixing bowl, place the dough in it, and cover it with a clean kitchen towel. Put the bowl in a warm area and let the dough rise for 1.5 hours or until it has doubled in volume.
Place the dough on a floured surface and divide it into 16-18 portions, rolling each into a small ball. Gently press your finger into the center of each ball and then twist the dough around your finger a few times to enlarge the hole. Cover the formed bagels and let them rest for 20-30 minutes.
While the bagels are resting, bring the water and honey to a boil in a pot until the honey is dissolved. Line two baking sheets with parchment paper. Preheat the oven to 200°C (392°F).
Carefully place a few bagels in the boiling water and let them cook for 1 to 1.5 minutes, turning them halfway through. Remove them from the water using a slotted spoon and let them drain on a kitchen towel. Brush the bagels with the beaten egg and sprinkle your desired toppings on them. Bake them in the oven for 15 minutes. Rotate the baking sheets in the oven (switch positions) and bake the bagels for an additional 7-10 minutes. Allow the bagels to cool well before slicing.
