Oat Cookies

Requirements
Plastic wrap (cling film)
Oven, baking sheet, parchment paper

Baking time: 12 minutes
Inspired by a recipe from Laura's Bakery
Ingredients
100 grams of unsalted butter
75 grams of light brown sugar
120 grams of Lisa's Choice flour
70 grams of Lisa's Choice rolled oats
Pinch of salt
1 teaspoon of vanilla extract
Variation: Add a bit of ginger
Preparation
1. Beat the butter and sugar until creamy. Add the remaining ingredients at the same time. Knead everything into a firm dough.
2. Shape the dough into a roll (about 5 cm in diameter) and wrap it in plastic wrap. Let the dough rest in the refrigerator for at least an hour.
3. Slice the roll into 1 cm thick slices and place the cookies on a baking sheet lined with parchment paper.
4. Bake the oat cookies for about 12 minutes at 190 degrees Celsius (375 degrees Fahrenheit) using both top and bottom heat, or until the edges turn golden brown.
5. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a rack to cool completely.
