Vegan Valentine's Day Cookies
Surprise your Valentine with these delicious heart-shaped cookies. These cookies are not only gluten-free but also vegan! To achieve a lovely red color, you can replace some of the gluten-free flour with beetroot powder.
Ingredients
For about 24 cookies
100 grams margarine
210 grams Lisa's Choice flour (180 grams if you add beetroot powder)
1 teaspoon baking powder
60 grams unsweetened applesauce (we used ready-made applesauce from a jar)
110 grams fine granulated sugar
Optional: 30 grams beetroot powder
Preparation
1. Place all the ingredients in a bowl and mix by hand or with a mixer using dough hooks until you have a nice dough ball. If the dough becomes too soft, refrigerate it for a short while.
2. Dust your work surface with gluten-free flour. Roll out the dough to about 4 mm thickness and cut out cookies using a cookie cutter. Place them on a baking sheet lined with parchment paper.
3. Place the baking sheet in the refrigerator for about 20 minutes to firm up the cut-out cookies.
4. Preheat the oven to 180°C (356°F).
5. Bake the cookies for approximately 15 minutes. The cookies are ready when the edges turn golden brown.
Optional:
Replace 30 grams of flour with 30 grams of beetroot powder. This will give your cookies a lovely red color. However, be cautious not to overbake the cookies, as they might turn orange-brown.
